Dottie’s Winter Coffee

Ingredients

2 oz Slane Irish Whiskey
.5 Stout reduction (using Ecliptic Imperial Barrel Aged Stout)
4oz Reforma’s Abuelita’s Blend coffee
Fernet Whip
Sprinkle with magical cinnamon and cayenne pepper

Instructions

In a pre heated Irish coffee mug, pour in Slane Irish whiskey, stout syrup, and add Abuelitas coffee.

Add your Fernet Whip and then sprinkle the magical cinnamon/cayenne dust.

*Stout Syrup-24 oz of Ecliptic Barrel aged Imperial stout, 1 cup Demerara. Mix together well in a sauce pan and bring to a simmer. Let simmer for 30 min. Remove from heat and let cool. Bottle and label. Lasts 30+ days.

*Fernet Whip-1oz Fernet to 16 oz heavy cream. Can mix in ISI or use bar mixer/blender. Store and label. Lasts 7 days.

*Cinnamon/Cayenne magic sprinkles- 2 table spoons cinnamon powder, 1 table spoon cayenne pepper. Mix well and store in spice shaker.

.25oz Demerara 2:1 syrup
.5oz Cointreau
.5oz Gran Classico
1oz Shane Irish Whiskey
2oz Foxy Coffee Co Cold Brew
Ice
Angostura Whipped Cream (4oz heavy whipping cream, 1oz Demerara simple syrup, .25oz Angosturra bitters in isi whipped cream charger)

Instructions

Build cocktail in chilled Collins glass.
Top with angostura whipped cream
Serve with straw

Ingredients

1.5 oz Slane Irish Whiskey, 0.5 oz banana infused amontillado sherry, 0.5 oz vanilla-sassafras leaf Demerara syrup, 4 oz roseline catapult blend coffee, winter spice sweetened whipped cream, fresh grated nutmeg

Instructions

Using a shaking tin with hot water place an empty tin into the one with hot water. Add Slane whiskey, banana infused amontillado, and vanilla sassafras syrup to warm up ingredients and stir. Preheat a glass mug, and fill with 4 oz coffee. Using another empty tin place winter spiced bitters, Demerara syrup, and heavy cream and use a hand milk frother to create a loose whipped cream. Using a bar spoon, lay the cream over all ingredients mixed with coffee in the mug. Grate fresh nutmeg over the top.

2oz Kids & Cobras Slow Blend
1oz Demerera Sugar
8oz Boiling Water
3oz Heavy Cream
1tblspn powdered sugar
1 tblspn Chambord

Instructions

In a French Press Combine:
2oz Slane Whiskey
1.5oz Kids & Cobras Slow Blend
.5oz Demerera Sugar
8oz Boiling Water
Let steep for 4 Minutes before serving.

In a shaker tin combine:
3oz Heavy Cream
1tblspn powdered sugar
1tblspn Chambord
Shake vigorously until thick in consistency and apply generously to top of Irish Coffee
*Makes 2 Servings, Multiply recipe by 2 for a full french press and enjoy with 4 friends!
